PATATAS BRAVAS | |
1 onion, chopped 30 ml - 2 tbsp. olive oil 1 bay leaf 2 red chilies 2 tsp. garlic 1 tbsp. tomato paste 1/2 tbsp. sugar (up to 1 tbsp. if sauce is too tart) 1 tbsp. soy sauce 1 450 g - 1 lb. can plum tomatoes, chopped 1 glass of white wine Salt and pepper 8 med. potatoes Preparation for the sauce: Sweat the onions in the oil with bay leaf. When soft, add chilies, garlic, tomato paste, sugar and soy sauce. Sweat for a further 5 minutes on low heat. Add chopped tomatoes and wine. Stir and bring to a boil. Simmer 10 minutes. Taste and season. The sauce should be slightly sweet, the flavor of tomato should not dominate. Preparation for the potatoes: |
