OLD FASHION SPANISH PUDDING 
Approx. 8-10 slices day old bread
1 (14 oz.) pkg. coconut, flaked
1 1/2 c. sugar
5 tbsp. flour
1/2 tsp. vanilla
6 eggs
1 qt. milk

Slice bread into 1/2 inch slices and alternate layer of bread sprinkled generously with coconut until 9 x 13 inch pan is within 1 inch of full.

FILLING:

In 6 quart saucepan mix sugar and flour well. Add 1/2 tablespoon vanilla, beat eggs separately (beat well). Add eggs and milk stirring with spoon until it is all stirred together, then beat about 2 minutes. Place on medium to high heat until thickened stirring constantly. If it becomes too thick add extra milk, if too thin a little cornstarch.

Note: Needs to be slightly thinner than regular filling to soak into bread. Pour over bread and coconut. Top with coconut.
