APPETIZERS AND SNACKS 
The recipes in this section were chosen for their appeal to both adults and children. Children need snacks for extra nutrition and energy. Too often children's snacks are high in fat and salt and are nutrient-poor. In addition to the recipe in this section, consider these easy snack ideas:

1. Keep a transparent refrigerator jar filled with colorful and crunchy carrot sticks, cucumber slices and zucchini stalks.

2. Fill celery with peanut butter or cream cheese and cut into bite-size pieces.

3. Keep a bowl of colorful, ready to eat fresh fruit handy.

4. Top whole wheat or rye crackers with mozzarella cheese, peanut butter or garbanzo spread.

5. Keep a variety of muffins in the freezer. Pop in the microwave for 25 seconds or let stand at room temperature for half an hour.

6. Make your own fruit pops by diluting fruit juices 1 part juice to 1 part water. Freeze in ice cube trays or pour into small paper cups; cover with foil. Make a slit in center of cover and insert popsicle stick.

Since microwave ovens vary in power, you may need to adjust your cooking time.
