WOK COLE SLAW 
4 slices bacon, coarsely diced
1 c. walnuts
6 c. shredded red cabbage (1 med. cabbage)
1 med. yellow onion, thinly sliced
1 lg. apple, peeled and sliced
1/3 c. cider vinegar
2 tbsp. brown sugar
1/4 tsp. allspice
Salt and pepper to taste
Chopped parsley

Heat wok over medium heat until it gets hot. Add bacon and walnuts. Stir-fry until bacon is crisp (about 2 minutes). Reserve two tablespoons of bacon fat. Discard the rest. Add shredded cabbage and onion. Stir-fry over high heat until cabbage begins to wilt (2 to 3 minutes). Add apple vinegar, brown sugar and allspice. Stir-fry until apple is cooked through (1 minute). Season to taste with salt and pepper. Sprinkle with chopped parsley. Serve immediately.
