PEACH RUM JAM | |
3 lbs. fully ripened peaches (4 c. chopped) 1 (1 3/4 oz.) pkg. powdered pectin 5 c. sugar 1/4 c. light rum Scald, peel and finely chop peaches (4 cups). Combine peaches and fruit pectin in a large saucepan or Dutch oven. Place over high heat; bring to a full rolling boil, stirring constantly. Add all sugar and stir. Bring to a full boil again. Boil hard for 1 minute, stirring constantly. Remove from heat; stir in rum. Skim off foam. Stir and skim for 5 minutes. Ladle into hot scalding jars. |
