BAKED MASHED POTATOES 
4 lg. Irish potatoes
1/3 c. heavy cream
1/2 tsp. rosemary
1/2 tsp. minced parsley
1/2 tsp. sage
Salt and pepper to taste
1/4 c. melted butter
Parmesan cheese

Boil the potatoes in the skins, then peel. Mash the potatoes with cream and seasonings. Place in a baking dish and brush with melted butter. Sprinkle with Parmesan cheese. Bake at 450 degrees for 20 minutes.
