QUEEN OF PUDDINGS 
1 pt. fine bread crumbs, sifted
1 qt. milk
1 c. sugar
4 egg yolks
1 piece butter, size of an egg
Grated rind of 1 lemon
4 egg whites
5 tbsp. sugar
Juice of 1 lemon
Jelly

Mix bread crumbs, milk, sugar, egg yolks, butter and lemon rind; bake until set. Do not allow to become watery. Spread with jelly. Whip whites of eggs to a stiff broth with 5 tablespoons sugar, and juice of one lemon. Spread on the top and brown. Bake at about 350 degrees.
