BLACKBERRY OR JAM CAKE | |
1/2 c. butter 1 c. sugar 1 c. jam 3 egg yolks 2 c. sifted flour 1 level tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. baking soda 1/4 c. sour cream or buttermilk 3 egg whites Cream sugar and butter. Beat in egg yolks. Stir in jam. Resift flour with other dry ingredients. Add flour mixture in about 3 parts, alternately with sour cream. Beat batter after each addition until well blended. Bake cake in 2 greased 9 inch layer pans or a 9 inch tube pan in moderate oven, 350 degrees for 25 to 30 minutes. Ice with cream cheese icing. |
