CHICKEN WITH BLACKBERRY BEURRE SAUCE | |
2 chicken breasts Butter Dash of salt SAUCE: 1/2 c. ripe blackberries 2 tbsp. butter 2 tbsp. blackberry jam Cut chicken breasts into 3-inch chunks. Spread chunks in single layer in skillet. Saute in butter about 20 minutes until done, brown on both sides. Sprinkle salt over chicken before adding sauce. Pour sauce over right before serving. Mix ingredients for sauce together in a separate pan and heat. Pour over chicken and stir to coat right before serving. |
