BROWN GRAVY 
2 tbsp. fat
1 c. cooking liquid or beef broth
1 tbsp. all-purpose flour
Salt & pepper

1. After roasting meat, remove from baking dish; cover to keep warm and set aside. Pour cooking liquid from meat into bowl, leaving particles in baking dish. Allow fat to rise to the top. Return 2 tablespoons fat to the baking dish. Skim off any remaining fat and discard. Pour cooking liquid into 1 cup measure. If necessary add beef broth to measure 1 cup. Set aside.

2. Blend flour into fat in baking dish. Microwave at high (100%) until lightly browned, d 3-7 minutes. Gradually stir in reserved cooking liquid. Microwave at high (100%) until slightly thickened and smooth, 3-6 minutes, stirring several times during cooking. Sprinkle with salt and pepper to taste. Stir in a few drops brown bouquet sauce, if desired. Makes 1 cup.

Since microwave ovens vary in power, you may need to adjust your cooking time.
