CHEESE VEGETABLE MEDLEY 
1 tbsp. olive oil
1 lg. onion, coarsely chopped
2 lg. peppers (1 red, 1 green), in chunks
6 summer squash (3 yellow, 3 zucchini), in chunks
1/2 lb. sm. mushrooms
2 lg. tomatoes, chopped
1 tsp. salt
1/4 tsp. freshly ground pepper
3/4 tsp. thyme
1 1/2 c. herb stuffing mix
2 c. shredded Swiss cheese

Heat oil in skillet. Add onions and peppers; saute 3 minutes. Add squash and mushrooms; saute 3 minutes. Add tomatoes and seasonings; cook 1 minute. Spread stuffing mix over bottom of buttered 13 x 9 inch pan. Layer 1/2 of vegetables over stuffing mix, then 1 cup of cheese. Repeat. Cover with foil. Bake at 350 degrees for 30 minutes. Serves 10-12.
