FRESH VEGETABLE MEDLEY | |
1 sm. head cauliflower 1 med. bunch broccoli, leave 1 inch of stem 1 sm. zucchini squash, cut in 1/4 inch slices 1 sm. acorn squash, cut in 1/4 inch slices 1 thinly sliced carrot 1 sm. green pepper, cut in 1/4 inch rings 1/2 c. sliced, fresh mushrooms 2 tbsp. butter 2 tbsp. fresh lemon juice Lemon pepper Place cauliflower in center of 10 inch round dish. Arrange remaining vegetables around cauliflower, as desired. Pour melted butter and lemon over vegetables. Cover with plastic wrap. Cook on high 10 to 14 minutes or until vegetables are slightly crisp but tender. Let stand 2 minutes. Season with lemon pepper. |
