BASIL BAKED TOMATOES 
3 oz. butter
2 large onions, thinly sliced in rings
10 tomatoes, thinly sliced
2 tbsp. chopped fresh basil, or 2 tsp. dried basil
6 grindings black pepper
1 tsp. salt
1 tsp. sugar
1 c. fresh bread crumbs

Preheat the oven to 400 degrees, lightly grease a glass dish with butter. Melt 2 tablespoons butter in a large frying pan over low heat. Fry the onion rings for 10 minutes, until tender, but not brown. Pout a layer of onion rings on the bottom of the dish, sprinkle with basil and cover with a layer of tomato slices. Add a little pepper, salt and a sprinkling of sugar. Dot with 1 tablespoon butter in small pieces. Repeat the layers until all the ingredients have been used. Cover the top with bread crumbs and dot with remaining butter. Place the dish in the oven and bake for 30 minutes. Serve hot, great as an accompaniment to roast pork, lamb or chicken.
