GLAZED YAMS | |
1 lb. yams 1/3 c. unsweetened pineapple juice 1/4 c. fresh orange juice 1 tsp. cornstarch 1. Bring a large saucepan of water to a boil. Add yams and cook for about 15 minutes or until barely tender. Drain and set aside to cool slightly. 2. When yams are cool enough to handle, peel and cut into 3/4 inch slices. Place in a single layer in a baking dish. 3. Preheat oven to 350 degrees. In a small bowl, combine pineapple and orange juices with cornstarch and stir until cornstarch is dissolved. Pour the mixture over yams and bake for 45 minutes. Makes 8 servings. |
