ZUCCHINI BREAD 
3 lg. eggs
1 c. oil (Crisco)
2 c. sugar
2 c. peeled and grated zucchini
3 tsp. vanilla extract
3 c. all-purpose flour
1 tsp. salt (optional)
3 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. chopped nuts or coconut

Beat eggs until fluffy. Add oil, sugar and mix; then add all other ingredients. Mix thoroughly. Put in 2 greased loaf pans. Bake 1 hour at 325 degrees. Cool on racks and remove from pans when cool.
