PEROHI 
4 c. flour
1/2 of 1 stick of butter
Salt (about 1 tsp.)
1 egg, beat & fill rest of c. with water

FILLING:

Potatoes
Coop er sharp cheese
Salt
butter

Mix dough. Let dough stand awhile before rolling. Boil and mash potatoes with the sharp cheese, salt and butter. Make into small balls. Roll dough and cut into rounds with a cookie cutter. Fill and pinch. After dough has been cut, pinch immediately so it does not dry out. Boil in salt water about 10 minutes. Drain. Brown butter and pour over Perohi. Onions may be added to the butter.
