MARINATED CHUCK ROAST 
6 lbs., 3 inch thick, roast
1/2 c. chopped green pepper
2/3 c. chopped onion
3/4 c. chopped celery tips and leaves
2 env. garlic salad dressing mix
1/3 c vinegar
1 c. oil
1 c. water
1 tbsp. Worcestershire sauce

Mix all ingredients and place roast in pan with marinade. Marinate 12 to 24 hours turning roast occasionally.

Roast at 325 degrees for 3 hours. Cool roast and slice. Use all of marinade to make a gravy. Chill gravy and remove fat. Combine sliced roast and gravy. Can be used as main dish or makes a great sandwich.
