ORIENTAL CHICKEN 
4 chicken thighs, skin & fat removed
2 tbsp. "lite" soy sauce
1 tsp. brown sugar
1/2 c. celery, sliced
1/4 c. onion, chopped
4 oz. water chestnuts, drained & rinsed
1 (8 oz.) pkg. fresh mushrooms, washed & sliced
3/4 c. water
1/4 tsp. garlic powder
1/4 tsp. dried red pepper flakes
1 (8 oz.) pkg. snow peas
1 tsp. cornstarch, mixed with 2 tbsp. cold water

Mix all ingredients except snow peas and cornstarch mixture in pressure cooker. Secure cover and make sure pressure gauge is in place; bring cooker to pressure according to instructions, then time cooker for 6 minutes. Let pressure drop of its own accord. Remove lid and add snow peas. Let mixture boil. Stir in cornstarch mixture and simmer until thickened. Serve over rice or oriental noodles. Calories: 161. Protein: 16 grams. Fat: 6 grams.
