BAKED BANANAS 
1/3 c. butter, melted
3 tbsp. fresh lemon juice
6 firm, ripe bananas, peeled
1/3 c. light brown sugar
1 tsp. cinnamon or ground ginger
1 c. grated coconut

Preheat the oven to 375 degrees. Spread the melted butter and lemon juice over the bottom of a shallow baking dish that will hold 6 bananas.

Stir the butter and lemon juice until well blended. Put bananas in dish and turn to coat well with the butter and lemon mixture.

In a small bowl, thoroughly blend sugar and cinnamon or ginger. Sprinkle sugar mixture evenly over bananas. Bake bananas 18 to 20 minutes, or until butter bubbles. Turn after 10 minutes of baking.

Sprinkle coconut over bananas about 5 minutes before they finish cooking. Serve warm with cream or maple syrup. Serves 6.
