MINI BLINTZES 
8 oz. pkg. cream cheese
1 egg yolk
1/4 c. sugar
1 tsp. vanilla (1 tsp.)
1 lg. loaf white bread

Trim crusts of bread and roll thin. Spread mixture and roll into jelly roll fashion. Dip and brush melted butter and cinnamon. Place on cookie sheet and partially freeze for 1/2 hour. Cut into 1-inch pieces and freeze. Bake frozen in 350 degree oven for 15-20 minutes. Serves with sour cream.
