MINI ITALIAN QUICHES 
1 (9") folded refrigerated unbaked pie crust
1 c. (4 oz.) shredded Mozzarella cheese
4 lg. eggs
1 c. half and half
1 tbsp. flour
1 tsp. Italian seasoning
1/2 tsp. each garlic powder & onion powder

On lightly floured board, roll dough into 15" circle; cut 12 circles from crust using 4" cookie cutter (re-roll dough if necessary). Grease 12 (2") muffin or tart tins with vegetable cooking spray; line tins with pastry. Place on baking sheet. Divide cheese evenly among tins. In medium bowl combine eggs, half and half, flour and seasonings. Pour egg mixture over cheese, filling tins about 3/4 full. Bake at 400 degrees for 30 to 40 minutes or until crust is browned. Remove from tins and cool.
