POLYNESIAN CHICKEN 
Chicken, cut into chunks & browned
1 (13 1/2 oz.) can pineapple chunks
Sliced green pepper
1 c. sugar, mixed with 2 tbsp. cornstarch
3/4 c. vinegar
1 tbsp. soy sauce
1/4 tsp. ginger
1 chicken bouillon cube (optional)

Preheat oven to 350 degrees. Drain pineapple, reserving liquid. Add enough water to liquid to make 1 1/4 cups. Mix liquid with all remaining ingredients, except pineapple chunks, green pepper and chicken. Bring to boil in saucepan and boil for 2 minutes. Arrange browned chicken chunks in baking dish. Pour sauce over chicken and bake, uncovered for 30 minutes. Add pineapple chunks and green pepper and bake 30 minutes more. Delicious served with rice.
