PEPPERED TURKEY SALAD | |
2 boneless turkey breast tenderloins (8 oz. total) 1/2 c. oil and vinegar salad dressing 2 red, green or yellow sweet peppers 2 c. torn lettuce Cut tenderloin steaks into 1/2 inch wide strips. In a 10 inch skillet heat 1/4 cup salad dressing. Add turkey strips. Stir fry over medium high heat for 3 to 4 minutes until tender. Remove from heat. Cool slightly. Cut peppers into strips. In a medium bowl combine peppers and undrained turkey. Pour the remaining salad dressing over turkey mixture, toss to coat. Cover and chill several hours or overnight. To serve, arrange lettuce on 2 dinner plates. Drain the turkey mixture. Spoon over lettuce. |
