PASTA & BEAN SOUP | |
1 1/2 c. Great Northern beans 5 c. water 1/2 lb. ground turkey 1 lg. onion, chopped 3 cloves garlic, minced 1 lg. carrot, chopped 2 tbsp. dried currants 6 c. chicken broth 1 c. water 1 tsp. dry basil 1/2 tsp. cumin 6 drops Tabasco sauce 1 (14 oz.) can tomatoes 1 c. dry sm. shell pasta To prepare beans, cover with the 5 cups of water and boil for 3 minutes. Cover and remove from heat and let them sit for 1 hour. Drain and rinse beans; set aside. Cook turkey in 5 quart pot until lightly brown. Drain any excess fat. Add onion, garlic and carrot; stir until onion is tender. Add currants, broth, water, beans, basil, cumin and Tabasco. Cover and bring to a boil. Simmer until beans are soft (1 1/2 to 2 hours). Chop tomatoes; add them (with liquid). |
