BANANA MUFFINS 
2 c. sugar
1/2 c. shortening
2 tbsp. oil
2 c. mashed ripe bananas
3 eggs
2 1/4 c. cake flour
2 1/2 tsp. baking soda
2 1/2 tsp. baking powder
3/4 tsp. salt
3/4 tsp. vanilla
1 1/2 tsp. lemon juice
1 c. buttermilk

Cream sugar, shortening and oil. Add bananas; cream well. Add eggs; mix well. Combine dry ingredients and add to sugar mixture. Add vanilla and lemon juice. Mix well at low speed. Gradually add buttermilk until smooth. Mix at medium speed for 3 minutes. Put into muffin tins (greased or paper lined). Bake at 350 degrees for 18-20 minutes. Makes about 2-2 1/2 dozen muffins.
