APPLE CINNAMON YAMS 
2 med. yams, pared
2 lg. apples, cored & sliced
3/4 c. orange juice
1/4 c. brown sugar
1 tbsp. lemon juice
1/2 tbsp. salt
1/2 tbsp. cinnamon
1 tbsp. butter
1/2 c. chopped pecans, optional

Grease a 1 1/2 quart casserole. Thinly slice yams and layer alternately with apples. Mix orange juice, brown sugar, lemon juice, salt and cinnamon. Pour over apples and yams.

Cover and microwave on high 15 minutes, basting several times during cooking. Dot top of yams with butter and sprinkle with pecans (optional). Microwave uncovered 2 minutes. Let stand 5 minutes before serving.

Conventional Baking: Bake covered 45 minutes at 350 degrees or until yams are tender. Dot with butter and bake uncovered an additional 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
