POORMAN'S JAMBALAYA | |
2 lg. chopped green/red bell peppers 1 lg. chopped onions (red or white) 2 to 3 stalks celery, optional 1/2 lb. Polish or Andouille (Cajun) sausage or any other spicy sausage 1/2 lb. chopped pork, (pork chops, ham) 2 c. uncooked rice 1 tsp. black pepper 1 tsp. red pepper (cayenne) 1 tsp. white pepper 2 tsp. salt 1 tsp. file powder 1/2 tsp. ground cumin 2 basil leaves Put a couple of teaspoons of olive oil in a frying pan at medium heat. Add the meat and cook until medium done. Remove the meat from pan but leave the drippings. Add the vegetables and cook until onions are slightly translucent. Add the meat back to the pan. Add the seasonings mixed previously in a bowl. Stir and let cook a few minutes longer. Add 2 cups of uncooked rice. Mix well. Add 2 cups of water, and let simmer for 15 minutes. Remove the basil leaves and serve. |
