CHICKEN CACCIATORE | |
1 lb. skinned, boned chicken, cut into strips 1/2 c. chopped onion 1 med. green pepper, cut into strips 1 garlic clove, mince 2 tbsp. butter or oil 1 (28 oz.) can whole tomatoes 1 (8 oz.) can tomato sauce 1/2 tsp. oregano leaves 1/2 tsp. dried basil 1 1/2 c. minute rice Saute chicken with onions, green pepper and garlic in butter. Add tomatoes, tomato sauce, and seasonings. Bring to a boil. Stir in rice. Cover, remove from heat. Let stand 5 minutes. Fluff with fork. Serves 4. |
