SPINACH CASSEROLE | |
1 (8 oz.) pkg. wide noodles or pasta 1 (10 oz.) pkg. frozen spinach 1 (8 oz.) pkg. cream cheese 1 egg 1/4 c. bread crumbs 1 tbsp. butter 1 (4 oz.) pkg. Mozzarella cheese, shredded 1 clove garlic 1 sm. onion, chopped sm. 1/4 c. Parmesan cheese Salt & Pepper to taste Preheat oven to 350 degrees. Cook noodles or pasta to package directions subtracting 1 minute from cooking time. Thaw and drain spinach. Spread butter on bottom of casserole dish. Shake bread crumbs over buttered dish until distributed evenly along bottom and sides. Put a layer of noodles, spinach, cream cheese. Sprinkle Mozzarella and Parmesan cheese. Continue with noodles, spinach, cream cheese, Mozzarella and Parmesan. Mix onions and garlic with egg and beat. Then pour mixture over the top of it all and cover. Bake for 35 to 40 minutes or until it bubbles and bread crumbs are golden brown. With grilled pork chops or chicken breasts this makes a great side dish or you can also layer in cleaned boiled shrimp for a great main dish also. You can also add a cup of chopped almonds or broccoli flowerettes. |
