1/2 c. regular or sweet unsalted butter 1/2 c. sugar 3 tbsp. Egg Beaters 1 tsp. vanilla extract 1/4 tsp. grated lemon rind 1 c. all purpose flour In a small bowl of electric mixer, cream butter and sugar until light and fluffy. Beat in Egg Beaters, vanilla and lemon rind until smooth. Gradually add flour, beating until well blended. Drop dough by teaspoonfuls onto greased baking sheets; flatten slightly. Bake at 375 degrees for 7 minutes or until done. Carefully remove from baking sheets and cool on wire racks. Makes 4 dozen. |
