CHICKEN AND RICE | |
3 lb. chicken, cut up Salt and pepper 1 c. UNCLE BEN'S® rice 1 pkg. (10 oz.) frozen corn, thawed or 1 (17 oz.) can kernel corn, drained 1 can (14 1/2 oz.) chicken broth 1 tsp. salt 1/4 c. barbecue sauce Preheat oven to 375 degrees. Season chicken with salt and pepper. Combine rice, corn, broth and salt in 12x8x2 dish and stir. Place chicken over rice. Cover tightly with foil and bake in 375 degree oven 55 minutes. Uncover and spoon barbecue sauce over chicken. Loosely cover and return to oven 5 minutes. Serves 4-6. |
