BUTTERNUT SQUASH SOUFFLE 
3 tbsp. butter
2 c. cooked, mashed squash
1 c. sugar
1/3 c. milk
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 eggs
1 tsp. vanilla
Marshmallows

Add butter to squash, stir. Then beat in mixer with rest of ingredients except marshmallows. Pour into casserole. Bake at 300 F. until set.
