POOR MAN'S CORDON BLEU | |
1 pkg. boneless skinless chicken breasts (pounded to 1/2-inch) 1 pkg. Kraft aged Swiss cheese 1/2 lb. shredded ham (can use "turkey ham") 1 c. white wine (sherry is fine and cheap) Pound chicken breasts to 1/2-inch. Lay 1/2 to 1 whole slice of cheese on top. Mound some shredded ham on top. Roll into "loaf" shape and secure with toothpick. There probably will be 4-6 "loaves". Place in ungreased glass pan so they are "cozy" (not too snug). Top with about 1 cup wine. Cover, bake at 350 degrees about 40 minutes. Remove cover to brown, about 10-15 minutes more. Serve with rice flavored with wine "sauce" on chicken. |
