PINEAPPLE CREAM CHEESE PIE 
1/3 c. sugar
1 tbsp. cornstarch
1 c. crushed pineapple

Cook above ingredients until clear. Set aside until cool. 1/2 c. sugar 2 egg yolks (2 egg whites, beaten) 1/2 tsp. salt 1/2 c. milk 1/2 tsp. vanilla

Cream the cheese and sugar. Gradually add salt, egg yolks, milk and vanilla. Spread pineapple mixture on bottom of unbaked pie crust.

Fold stiffly beaten egg whites into cheese mixture. Pour over pineapple. Bake at 400 degrees for 10 minutes. Reduce heat to 325 degrees and bake for about one hour.
