CHILLED CUCUMBER AND TOMATO SOUP 
3 cucumbers, peeled & chopped
1/4 c. parsley, no stems
1/2 c. green onions, chopped
2 cloves garlic, minced
1 c. tomato juice or V-8 juice
1 c. chicken broth
3 tbsp. cider vinegar
2 c. sour cream
Salt & freshly ground pepper to taste
Sliced cherry tomatoes for garnish

In food processor combine cucumbers, parsley, onions, garlic, tomato juice, broth and vinegar. Blend well. Pour into large serving bowl, add sour cream, salt and pepper. Garnish. Serves 4.
