CRABMEAT PANCAKES 
1 c. fresh crabmeat
3 tbsp. cooking oil
2 tbsp. scallions, minced
Salt & pepper
1/2 c. celery, chopped finely
4 eggs, well beaten

Heat oil in heavy fry pan. Mix beaten eggs into rest of ingredients and pour into pan. Cook over low heat until done (pancake is set). Cut into 4 pieces and turn each carefully. Serve hot.
