PORCUPINE BALLS 
1 tbsp. grits
1/4 c. tomato or V-8 juice
1 c. cooked brown rice
1 lb. ground beef (raw)
1 egg, slightly beaten
2 tsp. grated onion
1 tsp. salt
1/8 tsp. marjoram
1 tsp. paprika
Dash of pepper
1 1/2 c. tomato or V-8 juice
1/2 tsp. honey
1/4 c. soy sauce

Soak grits in 1/4 cup tomato or V-8 juice for 15 minutes. Combine cooked rice with beef, egg, onion, salt, marjoram, paprika, pepper, and grits-tomato mixture. Mix lightly. Shape into balls about 2 inches in diameter.

Place in shallow baking dish. Combine 1 1/2 cups tomato or V-8 juice, honey and soy sauce. Pour mixture over meatballs and bake about 35 minutes in preheated 325 degree oven.

Yield: 6 servings, approximately 18 meatballs.
