QUICK OATMEAL MUFFINS 
1 c. rolled oats (either)
1 c. sour milk
1 egg, beaten
1/3 c. shortening
1/2 c. brown sugar OR
2 pkgs. sweet and low
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
2 tsp. baking soda

I put 1 teaspoon vinegar in 1 cup sweet milk to sour it.

Measure shortening and melt it. Mix sugar, shortening, and beaten egg; add sour milk. Then sift the dry ingredients and add the oatmeal; mix well.

Fill muffins pans 2/3 full and bake at 400 degrees for 12 minutes.

(I have used rye flour in place of wheat.)
