OATMEAL QUICK BREAD 
1 1/4 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 c. brown sugar, packed
1 c. quick cooking oats
3/4 c. pecans, finely chopped
1 1/4 c. sweetened applesauce
1/3 c. oil
2 eggs
1/4 c. milk

Preheat oven to 350 degrees. In a large bowl sift together flour, salt, baking powder, baking soda, cinnamon and nutmeg. Stir in brown sugar, oats and pecans. In small bowl beat together until well blended, applesauce, oil, eggs and milk. Combine sauce mixture with flour mixture. Mix until dry ingredients are thoroughly moistened. Pour batter into greased and floured loaf pan. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.
