OATMEAL CAKE WITH COCOA 
1 1/2 c. boiling water
1 c. quick oats
1 stick butter or 1/2 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 well beaten eggs
1 1/3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tbsp. instant cocoa mix
Dates & nuts (opt.)

Pour boiling water over quick oats. Let stand 20 minutes. Mix butter with brown sugar and granulated sugar. Add beaten eggs and oat mixture. Sift dry ingredients together. Add dates and nuts if desired. Bake in oblong pan at 350 degrees for 30 to 35 minutes. When cake is done, spread with frosting.

FROSTING:

1 stick butter
1/2 c. cream
1 c. brown sugar
1 c. coconut
1/2 c. chopped nuts
1 tsp. vanilla

Bring to a boil the butter, cream and brown sugar. Add coconut, chopped nuts and vanilla. Mix. Spread on hot cake and place under broiler until bubbly.
