BANANA LAYER CAKE 
2 1/4 c. flour
1 1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. shortening
1 1/2 c. mashed bananas
2 eggs
1 tsp. vanilla

Sift flour, sugar, baking powder and salt; add shortening, 1 1/2 cups mashed bananas and eggs; beat for 2 minutes at medium. Scrape down bowl, add 1 cup mashed bananas and vanilla; beat 1 minute longer. Spread batter in 2 (8") pans. Bake at 375 degrees for 25 minutes. Remove layers to cool.

FROSTING:

1/4 c. butter
1 lb. powdered sugar
1/2 c. mashed bananas
1/2 tsp. lemon juice

Cream butter until soft and fluffy; add half of sugar; beat. Add remaining sugar. Beat until frosting is light and fluffy.
