CHICKEN PARMESAN 
1 chicken, cut up (prefer deboned breasts)
1/3 c. butter
1 1/2 c. Parmesan cheese
3 tsp. paprika
2 tsp. salt
1 tsp. pepper

In 7 1/2 x 12 inch utility dish, melt butter on high 40 seconds. Coat chicken with butter.

Combine rest of ingredients in a bag and add pieces of chicken, one at a time. Shake to coat with crumbs. Place skin side down (I remove skin) in dish with thickest pieces to outer edge. Cover with paper towel to absorb splatter.

Cook on medium 10 minutes per pound. After half of cooking time, turn pieces over and sprinkle with remaining crumb mixture. Brown as desired. Serves 4.
