SOUTHERN RAISIN PIE 
1 1/2 c. sugar
4 tbsp. flour
1 egg, well beaten
3 tbsp. lemon juice
2 tsp. grated lemon rind
1/8 tsp. salt
1 c. seeded raisins
2 c. water

Mix sugar, flour and egg, then add lemon juice, rind, salt, raisins and water. Cook over hot water for 15 minutes, stir occasionally. Pour in crust. Pastry for crust. Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees. Bake 20 minutes longer.
