FRUIT AND POUND CAKE | |
3 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1 cup unsalted butter, softened 2 cups granulated sugar 6 large eggs, room temperature 1 tablespoon vanilla extract 1/2 cup whole milk Preheat oven to 350°F and grease a loaf pan with nonstick cooking spray. Set aside. In a medium bowl, whisk together the flour, baking powder, and salt until combined. Set aside. Using an electric mixer on medium speed, beat the butter in a large mixing bowl for about 1 minute until creamy. Gradually add sugar while beating continuously, increasing to high speed until light and fluffy, approximately 3-5 minutes. Add eggs one at a time, ensuring each is fully incorporated before adding another. Mix in vanilla extract. Alternate between dry ingredients and milk mixture, beginning and ending with the flour mix (in three additions of flour followed by two of milk). Beat just until combined after each addition. Do not overmix. Pour batter into prepared loaf pan and smooth out evenly. Bake for approximately 60-70 minutes or until a toothpick inserted comes out clean when tested. Let cool completely before serving. Top with fresh fruits and whipped cream or vanilla ice cream. Enjoy! |
