APPLE NUT COFFEE CAKE 
1/2 c. shortening
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
pinch of salt
1 c. sour cream
2 c. chopped apples
1/2 c. pecans
1/2 c. brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tbsp. oil

Cream shortening and sugar. Add eggs and vanilla; beat well. Add 1 cup flour, baking powder, soda, salt and sour cream and mix well; then add second cup flour and mix. Fold in chopped apples and spread in greased 13 x 9 pan. Mix nuts, brown sugar, cinnamon, nutmeg and cooking oil together. Sprinkle over batter and bake at 350°F for 35 to 40 minutes.
