TEXAS PECAN CHRISTMAS CAKE 
2 c. flour
1 tsp. baking powder

2 c. flour
1/2 lb. candied cherries
1/2 lb. candied pineapple
1 lb. pecans

1 lb. butter
1 lb. brown sugar

6 egg whites, beaten
1/2 tsp. lemon extract

6 egg yolks
Brandy

Mix number 1 with number 3 in number 2 alternating with egg whites beaten. Add 1/2 teaspoon lemon extract. Very stiff mixture. Line bottom of ring pan with white paper. Put cake mixture in ring. Bake 3 hours at 225 degrees. When baked, pour small amount brandy on cake. Wrap tightly in tin foil refrigerate and use as needed. Beats fruit cake if you need that type of cake over holidays.
