SALMON LOAF 
1 (16 oz.) can salmon, drained
2 c. soft bread crumbs (about 2 1/2 slices)
2 tbsp. chopped green onion
1 tbsp. butter, melted
1/2 tsp. salt (optional)
1/8 tsp. pepper
1/2 c. milk
1 slightly beaten egg

Flake salmon, discarding skin and bones. In a bowl combine salmon, bread crumbs, chopped onion, butter, salt, and pepper. Mix well. Combine milk and egg; add to the salmon mixture and mix thoroughly.

Shape into a loaf in a greased shallow baking pan or in a greased 7 1/2 x 3 1/2 x 2-inch loaf pan. Bake in a 350 degree oven for 35-40 minutes. If desired, serve with Cheese Sauce. Makes 3 or 4 servings.

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. all-purpose flour
1/4 tsp. salt (optional)
Dash of pepper
1 1/4 c. milk
1 c. shredded cheddar, Swiss, American, or Gruyere cheese into the cooked sauce, stirring to melt.

In a small saucepan melt butter. Stir in flour, salt (optional), and pepper. Add milk all at once. Add cheese and stir over medium heat until thickened and bubbly. Stir 1 to 2 minutes more. Makes 1 cup.
