MEAT CAKES 
200 g (1/2 lb.) cooked meat
1 slice of onion
200 g (1/2 lb.) mashed potatoes
2 tsp. chopped parsley
Pinch of herb
Salt & pepper
Beaten egg

To Coat: Beaten egg and bread crumbs

To Fry: Lard

Garnish: Parsley

Remove any fat from meat. Mix meat and onion. Mix all ingredients except egg together. Bind with a little beaten egg. Form into a roll on a floured board. Cut into 8 pieces and shape into cake (1/2") thick. Coat with egg crumbs. Fry in hot oil until both sides are brown. Drain and serve garnished with parsley.
