CHICKEN SALAD 
1/4-1/2 c. mayonnaise
1-2 tbsp. honey
1/8 tsp. ginger
2 c. cooked, cubed, chicken
2 med. nectarines, sliced (may use mandarin oranges)
1 thickly sliced green onions
1/3 c. toasted slivered almonds
2 tbsp. lemon juice
1/2 tsp. curry powder, optional
1/8 tsp. salt
1 c. thinly sliced celery
1 c. dark red sweet cherries or red grapes, halved

For dressing, combine mayonnaise, lemon juice, honey, curry powder, ginger and salt. Set aside. In large bowl, combine chicken, celery, nectarines, cherries and green onions. Pour dressing over chicken mixture. Toss lightly to mix. Chill several hours. At serving time, add the toasted almonds and toss into salad. Serve in lettuce lined bowl.
