HARVARD BEETS 
2 c. boiled or drained canned beets
1/2 c. sugar
2 tbsp. butter
1 tbsp. flour
1/2 tsp. salt
1/4 c. vinegar mixed with 1/4 c. beet juice

Melt butter in saucepan. Add flour, stirring. Then add sugar, salt and add liquid gradually. Cook until clear (keep stirring). Add beets and heat thoroughly.
